Dairy & Gluten Free Soft Pumpkin Pie Cookies

Recipe:

Makes 8-10

 

Ingredients:

1 cup almond flour

1/4 cup cassava flour

1/2 cup pumpkin puree

3 tbsp olive oil

1 egg

1/4 cup date sugar

1 tsp pumpkin pie spice

1/4 cup Pure Food by Estee Naturally-Coloured Candy Coated Chocolate Chips

1 tsp baking powder

 

Directions:

1. Add wet ingredients to a bowl and mix until combined.

2. Add in the dry ingredients and mix again.

3. Separate the orange and yellow candy coated chocolate chips from the other colours and pour into the batter.

3. Roll dough into balls and flatten onto a parchment-lined pan.

5. Bake at 350°F for 10-15 minutes. Let cool and enjoy!
