Cook time: 30 minutes
Servings: 12 cake pops
Ingredients:
-
3 large eggs
-
⅓ cup water
-
⅓ cup oil
-
1 tsp vanilla extract
-
7 tbsp frosting (homemade or store-bought works)
-
2 cups white chocolate wafers (melting chocolate)
-
1 ½ tsp coconut oil
-
Orange food colouring
Directions:
-
Preheat your oven to 325F.
-
Grease an 8 inch baking dish and set aside.
-
In a medium sized bowl, whisk your eggs, water, oil, vanilla extract and Simple Mills Grain-Free Vanilla Almond Flour Baking Mix.
-
Pour your batter into the baking dish, and bake for 30-35 minutes, or until a toothpick comes out clean.
-
Let the cake cool for 5 minutes, then break the cake into smaller pieces and toss into a large bowl.
-
Add 7 tablespoons of frosting to the cake batter, and mix with a hand mixer until the dough sticks together and can form a ball.
-
Roll the dough into balls (about 1.5-2 tbsp of dough) and place on a parchment lined baking sheet. Place in the fridge to set for about 1 hour.
-
Remove from the fridge, then using your cake pop sticks, press on the sides of the cake pops to create pumpkin lines.
-
Melt ¼ cup of your white chocolate wafers (either using the double boiler method or in the microwave).
-
Add a small amount of melted chocolate to the end of your cake pop stick, then stick it into your cake pop. Refrigerate for 1-4 hours to ensure the cake pops are fully set.
-
Melt the remainder of your chocolate and add orange food colouring. Add as many drops as you like to reach the desired orange colour of your preference.
-
Remove the cake pops from the fridge and dip into the orange melted chocolate. Tap off any excess chocolate and place the cake pops upright on a stand to set.
-
Add a chocolate chip to the top of your cake pops before placing in the fridge for at least 1 hour to fully set before enjoying.
