Dairy-Free

Ingredients:

4 tablespoons Bison Tallow

4 tablespoons flour

2 cups juices from cooking meat, or bison bone broth

Sea salt and freshly ground black pepper to taste

Butter if desired

Directions:

  1. Heat the bison tallow in a pan over medium-high heat. When the fat is melted, hot and shimmering, add the flour into the skillet and stir. It should quickly absorb the fat and form a thick paste. Continue to cook, stirring frequently, until the paste becomes golden brown in color and develops a rich aroma.
  2. Pour in the meat cooking liquid or bone broth ½ cup at a time. Whisk the liquid in until smooth. Bring the mixture to a boil, then reduce to a simmer and cook for about 2 minutes. Season with sea salt and freshly ground black pepper to taste.
  3. If desired, stir in about a tablespoon of grass fed butter for added flavor and silky texture.
  4. Serve and enjoy with your favorite meal!
