Add ooey-gooey goodness to your life with these delicious ghee s’mores cookies. Gluten-free and with velvety chocolate chip, these cookies are so good that even the marshmallows feel toasted! Perfectly golden and chocolicious. Everyone will be asking for ‘s’more’ please!
Gluten-Free
Ingredients:
1 cup ghee room temperature
2/3 cup brown sugar or brown sugar substitute
1/3 cup sugar or sugar substitute
1 egg
1 teaspoon vanilla
2 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 cups gluten-free flour
4 ounces chocolate chips or chunks
2 ounces mini marshmallows
Directions:
1. Preheat to 350 F with the oven rack in the middle-low position.
2. Line your baking sheets with parchment paper. Only one baking sheet will go in the oven at a time, but you will do this 4 times. 4 baking sheets OR 4 batches on one baking sheet.
3. In a small bowl, whisk the flour, baking soda, and salt.
4. In a medium to large bowl, cream the ghee and sugars.
5. Add the egg and vanilla and beat until mixed well.
6. Add half the flour mixture with a spatula and mix batter until just combined. Add the rest and mix until just combined.
7. Add the chocolate and marshmallows, mix just until incorporated.
8. Measure each cookie to be 45 grams each. You will fit 6 cookies per baking sheet.
9. Bake for 5 minutes, then rotate the pan.
10. Bake 3-4 minutes until the sides are golden brown, but the center is still slightly under-baked.
11. Remove the baking pan from the oven and bang lightly on the counter to create more lines and set cookies.
12. Let cool on wire racks.
