Gluten-Free Chocolate Peanut Butter Cup Cookies

Chocolate + Peanut Butter Cups = One delicious gluten-free cookie! With a touch of flaky sea salt, these chocolate peanut butter cup cookies are as decadent as they sound. Who would've thought throwing in this classic sweet treat would make chocolate cookies so much butter? Oh that's right, we did!

Makes 10-12

Ingredients:
3 tbsp softened coconut oil
1/4 cup maple syrup 
1 egg
1 1/2 cups almond flour
3 tbsp cocoa powder
1 tsp baking powder 
1 tsp vanilla extract 
4 Skinny Dipped Milk Chocolate Peanut Butter Cups
Flaky sea salt to garnish 

Directions:
Add wet ingredients to a medium mixing bowl. Mix until combined. 
Add in the dry ingredients except for the peanut butter cups and flaky sea salt. Mix again. 
Chop peanut butter cups into chunks. Stir into the batter. 
Roll dough into balls and flatten onto a parchment-lined pan. Bake at 350°F for 10-13 minutes. 
Let cool and top with flaky sea salt. Enjoy!
