Ingredients:

Chocolate pie crust:

1 cup oat flour made with whole oats, instructions below

2 tablespoons chopped walnuts optional

1/4 cup cocoa powder

1/8 teaspoon baking powder

1/4 teaspoon salt

1/3 cup brown sugar or date sugar

1/4 cup applesauce

1/2 teaspoon vanilla

Chocolate filling:

1 cup vegan semi-sweet chocolate chips or chunks

3 tbsp vegan heavy cream

1 cup Dandies Vegan Marshmallow Cream

Directions:

Make  the crust:

  1. Begin by preheating the oven to 375°F.
  2. In a large mixing bowl, add oat flour, cocoa powder, baking powder, salt, and brown sugar and whisk together well. In a smaller bowl, combine the applesauce and vanilla. Then combine the dry ingredients with the wet ingredients in the larger bowl.
  3. Once the ingredients are well blended into a stiff dough, place the clump in the center of your pie dish. Lightly wet your hands and begin to press the dough with your fingers and the palm of your hand to push it flat and up the sides of your dish. Chill for approx two hours.
  4. Once chilled, place the pie crust in your oven and bake for approximately 10-12 minutes until it is lightly crispy. Remove from oven and allow to completely cool before using.

Make the filling:

  1. Heat your vegan heavy cream on the stovetop until lightly steaming- alternatively, you can heat in your microwave for 30 seconds.
  2. Pour cream over chocolate, leave for 3-4 minutes, then stir gently. Continue to stir until smooth.

Assemble:

  1. Pour ganache into your prepared pie crust, set in the fridge for 1-2 hours.
  2. Once chilled, decorate with dandies vegan marshmallow cream. Top with more chocolate if desired. Enjoy!
