Vegan, Plant-Based, Gluten-Free
Ingedients:
2 cups Made Good Apple Cinnamon Light Granola
¼ cup flour (can use oat flour or gluten-free all purpose flour)
½ tsp salt
¼ cup melted coconut oil
¼ cup maple syrup or honey
1 tbsp brown sugar or coconut sugar
1 tsp vanilla extract
1 tbsp cinnamon
White chocolate for drizzling (optional)
Directions:
1. Preheat your oven to 350°F and line a loaf pan with parchment paper.
2. In a large mixing bowl, combine the rolled oats, flour and salt.
3. In a separate small bowl, whisk together the maple syrup or honey, brown sugar, melted coconut oil, vanilla and cinnamon.
4. Add this wet mixture to the dry mixture and toss until everything is incorporated and there are no dry bits left.
5. Press the dough evenly into the parchment-lined loaf pan.
6. Bake for 10 – 12 minutes until the bars are puffed up, and the edges are lightly golden brown. NOTE: they might not look fully done when you take them out, but they will set as they cool.
7. Once baked, remove the pan from the oven and allow the bars to cool to room temperature.
8. Once the bars have cooled, drizzle them with melted white chocolate if desired.
Enjoy!
